In honour of Anzac Day this week, I will share my healthier version of Anzac Biscuits for you!

Makes 25            Prep time 15 mins                Cooking Time 20 mins

Ingredients

1 cup rolled oats

3/4 cup plain flour

1/2 cup coconut sugar

1/2 cup desiccated coconut

1/2 cup butter or oil

1 tsbp water

1/2 tsp bicarb soda

3 tbsp honey or maple syrup

 

1. Preheat oven to 160ºC/140ºC fan forced. Grease oven tray and line with baking paper.

2. Combine oats, sifted flour, honey, sugar and coconut in bowl.

3. In a small saucepan(on a low heat) combine butter/oil, honey/maple syrup and water, then stir until smooth. Add in bicarb soda. Stir into dry ingredients.

4. Roll tablespoons of mixture into balls and place them on the prepared oven trays, then flatten them slightly.

5. Bake in oven for 20 minutes. Cool on trays for at least  5 minutes once they’re taken out.

 

*Other notes

For a gluten free version use gluten free rolled oats, and almond meal in place of flour.

Feel free to also add in chia seeds, dried fruit or chopped nuts if you’d like.
