2 cups self-raising flour, sifted

1/3 cup cocoa or cacao powder, sifted

1 tsp baking powder

1 tsp vanilla essence

2 eggs

1/3 cup butter or oil

1/2 cup milk

1/2 cup sweetener of choice (maple syrup, honey, rice malt syrup etc).

3/4 cup chocolate chips or cacao nibs (optional)



1. Preheat oven to 180ºC/160ºC fan-forced.

2. Line a 12 hole cupcake/muffin tin with patty cases.

3. Combine flour, cocoa/cacao and baking powder in bowl.  Add eggs, oil, essence, milk , sweetener and optional choc chips, then mix well to form a smooth batter.

5. Spoon mixture into patty cases.

6. Bake for 25 minutes or until firm and cooked through.


*Other notes

-To create a gluten free version, you can use almond meal, coconut or spelt flour in place of the SR flour.
