This recipe is adapted from avegankitchen.wordpress.com, and is so easy to make! I love the recipes off this site and recommend it, if you’re interested in quick, healthy recipes.

Ingredients

Crust

1 1/2 cups flour or almond meal

1/3 cup shredded coconut

1/4 cup coconut oil or butter, melted

4 tbsp honey

1 tbsp vanilla essence

Filling

1 1/2-2 cups berries- frozen or fresh

1.Preheat oven to 160/180°C fan forced. Grease a pie tin.

2.Combine all crust ingredients in a bowl. Mix until dough-like.

3. Press mixture into greased tin.

4. Bake in the oven for 10-15 minutes. Meanwhile, start making the filling.

5. Place the berries in a saucepan, and heat until softened.

6. Pour the berries into the pie crust, and cook in oven for a further 5 minutes.

*Other notes

You can also turn these into slices. It is the same recipe, just using a slice/ rectangular instead of pie tin.
