Makes 12 (1 was eaten before the photo was taken :P)


1 1/2 cups self raising flour

3/4 cup sweetener of choice -sugar or honey or maple syrup (for a healthier version)

2 tsp baking powder

1/2 -1 cup raspberries *

1 tsp vanilla essence

3/4 cup milk

1 egg, lightly beaten

1/4 cup melted butter or oil

1. Preheat oven to 180°C. Grease a 12 cup non-stick muffin tray. Line with patty cases.

2. Sift flour and baking powder into a bowl.

3. In another bowl, whisk together butter/oil, egg, vanilla essence and sugar/maple syrup/honey. Add to flour mixture.

4. Add milk, and mix until combined. Fold in berries.

5. Evenly divide batter amongst 12 patty cases. Bake for 20-25 mins or until the centre comes out clean.

*Other notes

You can use any berries you’d like. Frozen or fresh.
