These apricot coconut balls are the perfect little snack! They don’t take very long to prepare and they are absolutely delicious! I have two recipes to share:  one that involves using a food processor and one that doesn’t require a food processor.

Makes 15+

WITH FOOD PROCESSOR

Ingredients

  • 2 cups dried apricots
  • 1 cup dessicated coconut
  • Extra 1 tbsp dessicated coconut

Equipment

  • Food processor
  • Plate or board

1.  Combine dried apricots and dessicated coconut in a food processor. Mix until apricots are paste-like OR there are no or minimal chunks of apricot in the mixture.

2. Sprinkle the extra tablespoon of dessicated coconut onto a board or plate. Roll the apricot and coconut mixture into balls and cover them with coconut.

3. Pop them into the fridge for 10 or so minutes or eat right away!

WITHOUT FOOD PROCESSOR

Ingredients:

  • 3/4 cup dried apricots
  • 1 cup boiling water
  • 1 1/2 Tablespoons orange juice (have the children juice an orange for you)
  • 3/4 cup dessicated coconut
  • A little extra dessicated coconut
  1. Soak the dried apricots in the boiling water until soft. Drain well.
  2. Chop the apricots finely.
  3. Then  combine the apricots with the with the orange juice and 3/4 cup of coconut. Mix well.
  4. Finally, roll spoonfuls of the mixture into small balls and then roll in extra coconut.
